Yummy Banana Bread!

I have been trying to bake from scratch more lately -  It not only saves money, it tastes so much better! When it comes to banana bread, I have tried many recipes over the years. After much tweaking, I finally came up with this recipe which always comes out perfect! My whole family loves it - even my hubby who swore he didn't like banana bread. The kids always help me make it and can't wait until it comes out of the oven. We made this today -  I hope you'll try it!

Altered recipe from
  • 1 cup granulated sugar
  • 1 stick unsalted butter
  • 2 eggs
  • 3 ripe bananas
  • 1 tablespoon milk 
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Preheat oven to 325. Butter a 9x5x3 loaf pan.

Cream butter and sugar. Add eggs & vanilla - beat well.

In a separate bowl, mash the bananas with a fork. Stir in milk and cinnamon.

In a third bowl, mix together flour, baking powder, baking soda and salt.

Add banana mixture to the creamed mixture and stir until combined. Add flour mixture and stir just until flour disappears. Do not over mix.

Pour batter into prepared loaf pan and bake for about 1 hour and 10 minutes or until toothpick comes out clean. I usually start checking it at 60 minutes. My oven is a little wacko. Let cool for 10 minutes and then remove bread from pan. Cool completely. Enjoy!

That looks so good. :) I have tried making banana bread before (actually muffins) and they always come out hard and like really light (not dark and rich like your picture). :( I will have to give this a try. :)
